CHEESE OMELETTE

An omelet is a quick and easy way to have a low carb, high protein breakfast. Eating good quality protein at each meal has been shown in studies to promote sustainable weight loss.

Spinach and Cheese Omelet

Ingredients:

  • 3 Eggs (whisked)

  • 3 Egg Whites (whisked)

  • 2 slices bacon (can be substituted with ham)

  • 1 cup White Button Mushrooms (chopped)

  • 2 cups Baby Spinach (substitute cooked broccoli

  • 28 grams Swiss Cheese (sliced)

  • 1 tsp Extra Virgin Olive Oil

Directions:

  1. Cook bacon, set aside on paper towel to absorb excess fat. Drain fat from frying pan and wipe with a paper towel. Saute spinach in pan and when wilted remove from pan and set aside.

  2. Saute chopped mushrooms and baby spinach in pan until mushrooms are slightly brown and spinach is wilted. Remove from pan and set aside.

  3. Add oil if necessary and pour the eggs into the skillet and let it cook until almost set.

  4. Place the cheese evenly across one half of the omelette, top with spinach and mushrooms, and then fold the other half over on top. Remove from the heat and transfer it onto a plate. Enjoy!
